The Vanilla Queen’s Apple Crisp

Crisp Topping

13/4 cups all-purpose flour or gluten-free flour

11/4 cups oats

21/4 cups sugar (or less)

1/4 teaspoon allspice

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon Rain’s Choice pure Vanilla Extract or 1/2 teaspoon Rain’s Choice ground Vanilla Bean Powder

2/3 cup cold unsalted butter

Apple Mixture

710 tart apples depending on size, peeled, cored, and sliced

2 tablespoons sugar

2 teaspoons cinnamon

2 teaspoons lemon juice

1/2 teaspoon Rain’s Choice pure Vanilla Extract

Instructions

Preheat oven to 350 degrees. Grease an 8 x 12-inch or 9 x 13 deep-dish baking pan.

Mix together the flour, oats, sugar and spices in a large bowl. Using the large holes of a grater, grate the butter into the bowl. Blend until the mixture just begins to come together, being careful not to over-mix. You can also do this in a food processor if you choose, but don’t over-mix.

Toss the apples in a large bowl with the sugar, cinnamon, lemon juice, and vanilla. Spoon into the baking pan and sprinkle the topping mixture over the fruit.

Bake for 45 minutes, or until the apples are tender and the topping is browned and crisp.

Serve warm with whipped cream or ice cream.

Notes

Adjust sugar if you are using sweet apples or other fruit, and adjust spices as you wish.
