We are excited to now carry 70% Nacional (National) Chocolate wafers for superb baking and cooking. Nacional, a premium chocolate from Ecuador, is considered by the experts to be the most flavorful chocolate in the world. The flavor profile begins with notes of citrus and nuts, a full-bodied burst of chocolate, and a finish reminiscent of jasmine flowers. This single-origin chocolate is ideal for mixing with cocoa for a thick, chocolaty beverage, for creating richly-flavored baked goods, candy and other confections, chocolate fudge sauces, and savory foods.
Nacional chocolate contains just three ingredients, all organically grown: cacao, cane sugar and cocoa butter. It is fairly traded and rainforest-friendly.
Use and Storage Information
Nacional chocolate wafers can be used in place of whatever chocolate you have been using. Although it is registered as 70%, I’ve noticed that it is not quite as sweet as 70% chocolates I’ve used. Feel free to add 1-to-2 tablespoons more sugar to whatever you are preparing if you want it a bit sweeter.
Store Nacional chocolate in its packaging or in an airtight container in a cool, dark cupboard. Ideal storing temperature range is 61 – 80 degrees Fahrenheit. As this chocolate is minimally processed, a light whitish coating on the top of wafers (bloom) can occur. It does not affect the flavor or quality of the chocolate.
