Culinary Tips

Indonesian vanilla beans are historically harvested early. This practice adds phenolic notes to the extracts, which is why they are often used in vanilla blends as they create a unique, smoky flavor.

The Indonesian blend is a good vanilla extract for production baking as the flavor is more stable and carries well to the baked goods. It is also an excellent extract to use in Asian and Indian cuisine as the smokiness adds an unexpected flavor note.
